"Kaiserschmarrn" (shredded pancakes with raisins and sugar)

Prepare for you and your family this imperial Austrian dessert just like a farmers’ wife did – according to a legend – for the Emperor Franz Josef I.

Ingredients for 4 persons

  • 3 eggs
  • 500 ml of milk
  • 1 tbsp of sugar
  • 1 pinch of salt
  • 350 g of all-purpose flour
  • possibly a tbsp of raisins
  • 1 dash of mineral water (with gas)
  • 30 g of butter or margarine
  • powdered sugar for dusting

Preparation

Separate the yolk from the white of the egg. Whisk milk, yolk, sugar and salt in a bowl. Add the flour while whisking until the mass is slightly viscid. Add raisins if you want some. Add a dash of mineral water to make the dough lighter.

Whisk the white of the egg to froth and add it to the mass. Melt butter or margarine in a pan and add the dough. Bake in medium heat until the bottom of the mass is done. Turn the mass with a spatula and shred the mass into pieces with two forks.

Turn the shredded pieces time after time until they are done.
Serve this imperial dessert with powdered sugar and if you fancy stewed plums or apples.
